I saw some physics features in the Unreal demo, cool.

Is it possible to have voxels fall if they have no supporting voxels nearby? Like in Minecraft or 7 days to die? If the answer is yes, how customizable is it? Per material?

Yes, Voxel Farm pioneered this feature in 2013.

If you are using Unreal, you can find the required configuration here:  https://www.voxelfarm.com/doc.html?enabling-voxel-physics

It is not a per-material configuration. If fragment detection is enabled, all free-standing pieces will fall.

Will that make each individual voxel fall? In the Unreal Demo, everything falls as one piece.

Would be cool if you could specify (per voxel type, material.. whatever) how much support a voxel needs to not fall. That's how it works in 7 days to die, so large caves need supporting beams to not collapse.

Perhaps this is possible with the SDK. Thanks for the reply, you guys are awesome!
